In 2020 Mardi Gras will set sail with Emeril Lagasse’s first-ever restaurant at sea: Emeril’s Bistro 1396. Everybody knows about Emeril’s love for Creole cuisine. Sharing his hometown favorites with the world is his life’s work and now you’ll enjoy the authentic bayou flavors and fun that New Orleans is known for on your vacation. If you haven’t had the pleasure, It has talked about fried oysters, BBQ shrimp, duck & sausage gumbo, PO-boys, muffuletta sandwiches, fresh ceviche, jambalaya, and more.

Lose yourself exploring a delicious menu where you’ll find “Green Eggs and Ham,” brightly colored fruit, gravity-defying pancake stacks, funky french toast, “Moose Juice” ‘n’ ”Goose Juice” and much more.

The smoke’s the point at Guy’s new joint. With choices like brisket, sausage, baby back ribs, salmon and dry-rubbed chicken, a pros wake up early to smoke the meat right there over hickory and apple wood, all before serving up these favorites at your table complete with classic sides. This new fine dining restaurant, exclusively aboard Mardi Gras, was dreamed up to serve delectable seafood classics that keep more than just an eye on the presentation more like a whole face.

Some of the world’s favorite flavors aren’t found in restaurants but served up on the street in trucks, stalls, and carts where the presentation takes a backseat to flavor, convenience, and quality. After all, when you’re just feet from the chef, you can tell they’re cooking to impress! Street Eats is Carnival’s tribute to this food phenomenon, debuting aboard Mardi Gras with an ever-changing series of grab-and-go dishes. This open-air spot features three stations one that specializes in steamed stuff like bao buns and siu mai, one that puts the “skill” in skillet with the likes of kebab and satay, and oh yes the station that fries up favorites like empanadas and falafel. Aboard Mardi Gras you may be far from the street, but flavor’s right around the corner.
